Old-Fashioned Ratatouille
Hello readers!! Here is the post I promised about the ratatouille I made over the weekend. I got the recipe from a website that I will link down below. It was a more time consuming recipe because all the vegetables need to be individually chopped into bite size pieces and browned in batches before letting them sit on the stove for awhile. However, I do think taking the extra time to let it sit and cook down was a fantastic decision. I taste tested the ratatouille before it had cooked down, and it was a pretty average mixture of vegetables in a pot. However, after letting it simmer for an hour, it became a delicious almost vegetable stew type thing. All the flavors blended together very nicely, and the vegetables became so soft they almost melt in your mouth. Overall, it is a very simple recipe that requires the vegetables (onion, tomato, garlic, eggplant, zucchini, yellow squash, bell peppers), olive oil, salt, and pepper. The only downside would be not having enough time to make it, so I would definitely keep this for a weekend or a day off.
